Food & Recipes
Simple, healthy, and economical recipes that fill you up without weighing you down. I believe food should be super healthy and filling — the kind that leaves you satisfied and nourished, not counting the minutes until your next snack.
That said, I'll be honest: chocolate runs a very close second as my favorite food. Balance, right?
My All-Time Favorite Vegetable Soup
Inspired by Mark Bittman's approach, this soup is endlessly adaptable and deeply comforting. It's the recipe I return to when I need something warm, wholesome, and budget-friendly.
What makes it work:
- Start with onions, carrots, and celery — the classic base.
- Add whatever vegetables you have on hand: zucchini, cabbage, green beans, potatoes, or tomatoes.
- Simmer with good broth and a parmesan rind if you've saved one.
- Finish with fresh herbs and a drizzle of olive oil.
