Servings: 8

  • 4 C Flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 TBSP sugar
  • 4 TBSA butter
  • 1 C raisins
  • 1 TBSP caraways seeds if wanted
  • 1 3/4 c buttermilk
  • 1 egg beaten

  • In a large bowl mix dry ingredients
  • Cut in the butter (I use my hands) until it looks crumbly
  • Add in raisins and caraways seeds, if using-
  • Stir in the buttermilk and beaten egg. until just mixed together
  • Plop onto a floured surface, and knead 5 times.
  • Pat into a flat circle.
  • Place into a well greases cast iron pan. If you have your Granny's, its even better. If not, oh, well, that's okay, too
  • Cut an "X" into the dough.
  • Bake at 425 for 35-45 minutes, until well browned and sounds hollow when tapped.
  • Enjoy with all the Irish trappings- but my favorite is a slice, toasted, with butter and jam, and pot of tea.
