This weekend I went to a healthy heart class run by David Martin at Phys-Ed. David is personal trainer at the gym, He is also a studying nutrition and a great blogger at Believe Sweat and Inspire. He made lots of heart-healthy recipes for us to try, and this is one of my favorites: Quinoa Protein Bars.
- 1/3 cup quinoa, cooked and cooled
- 2/3 cup water
- 16 whole dates
- 1/2 cup raw almonds
- 13 cup natural crunchy peanut butter
- 1/4 cup chocolate chips
- 1 tablespoon honey
- In a food processor, add dates and pulse until they form a ball. Remove dates from processor and place in bowl. Add almonds to processor and pulse until they are finely minced. Add dates peanut butter, water,and cold quinoa to the almonds in the processor and process until well combined. Press into a greased 8" pan and set aside. In a double boiler or in the microwave melt chocolate chips and honey until smooth. Spread over quinoa mixture, cover and place in the refrigerator for about 3 hours or until firm.
- Cut into 1" pieces and enjoy!
